INGREDIENTS
- 400g of Avafina Organics Onion & Chive Queen Cheese™
- 1 tbsp coconut oil
- A pinch of pepper
- 8 Medium/large button mushrooms
- 3 Garlic cloves diced
- ½ Cup of diced onion
- 2 Large handfuls of spinach
METHOD
- In a frying pan, heat the coconut oil on medium/high heat.
- Add diced garlic and onion and sauté until fragrant.
- Preheat the oven to 350.
- Lower the heat and add the spinach, cream cheese and pepper.
- Mix well and remove from heat.
- Remove stem and insides of the mushrooms.
- Stuff each mushroom wit the cream cheese mix.
- Place mushroom caps into a baking sheet and bake for 15 minutes.
